Maple syrup - how to make

Maple syrup is obtainedduring the growing season, when the juice flowing from the roots to the crown of the tree carries carbohydrates stored in the organs. The juice harvest time is four to eight weeks, depending on weather conditions (usually late February to early April).
We can take maple juice on our own , thanks to which we can obtain cheaply the ingredient needed to prepare tasty and he althy maple syrup. Themethods of making maple syruphave improved over the past few centuries, but remain unchanged. The juice is still harvested first and then concentrated without the use of chemicals or preservatives.
In individual maple trees, depending on the diameter of the trunk, from one to three holes are drilled and taps are placed in them. A single tree produces 35 to 50 liters of juice per season and must be around 30 to 40 years old.To make 1 liter of maple syrupyou need to evaporate the water from 20 to 50 liters of tree juice. After collecting the juice, it should be boiled immediately or kept in the refrigerator so that it does not get stuck . Simmer the collected juice, keeping an eye on it.

Note!Maple syrup cooked too long may eventually crystallize, while insufficiently thickened it will be watery and deteriorate quickly.

After evaporating the juice andobtaining maple syruppour it into bottles, preferably glass ones, because stored in plastic containers it darkens over time. Contrary to plastic, glass does not allow gas exchange and maintains the quality of maple syrup for longer.
