Ingredients:5 large Jerusalem artichoke tubers, less than a can of chickpeas (you need to cook it), one small apple, a handful of chopped walnuts, iceberg lettuce (a few leaves), olive oil, s alt and pepper, ripe orange, honey
Preparation:tubers, wash and peel, cut into pieces. Season with s alt and pepper, pour olive oil and honey. Put in the oven, preheated to about 200-220 ° C for about 20 minutes. About halfway through cooking, turn the pieces over to brown evenly. We take it out when the edges are already firmly seared. As the base of our Jerusalem artichoke salad, we put iceberg lettuce leaves, then we put baked Jerusalem artichoke, thin apple slices and cooked chickpeas.Sprinkle everything with freshly squeezed orange juice and olive oil and add pepper.
For this Jerusalem artichoke salad, we can also make a simple sauce , based on mustard and olive oil. Just mix a tablespoon of table mustard, a tablespoon of olive oil and a tablespoon of orange juice, s alt and pepper as you like and you're ready to go! Pour the sauce over the entire salad or serve it in a separate sauceboat.

Vegetable salad with Jerusalem artichoke

Preparation:Peel and cook Jerusalem artichoke, then cut into small cubes. Remember that Jerusalem artichoke is cooked shorter than potatoes! Dice boiled carrots, parsley, celery, pickled cucumbers and eggs. Put everything in one large bowl. To this add drained canned peas and chopped parsley. Season everything with s alt and pepper, add about 2-3 tablespoons of mayonnaise and one tablespoon of table mustard. We mix everything so that all ingredients are combined with each other. Put the ready-made Jerusalem artichoke salad into a new, clean bowl, cover it with cling film and put it in the fridge for a few hours so that the ingredients are chewed.
