I like to experiment with rose petals. I really like their aromas with a hint of astringency or exceptional sweetness.
The best are the petals of Damascus and centifolia roses, from which rose oil is made. They have a sensual, mesmerizing and heavy aroma with a slight hint of sweetness.After washing their petals and breaking them into smaller pieces, I add them to pancakes or homemade plum cake. If I were to recommend a universal variety, I would choose the 'Celsiana' Damascus rose, which flowers twice a season. It creates a dense two-meter shrub with branches hanging down to the sides. No trimming needed.
My second favorite is the Centifolia Rose 'Pompon de Bourgogne', the flowers of which change color as it grows. It flowers only once and is also suitable for small gardens, as well as for growing in a pot on a terrace or balcony.French rose flowers with a slightly spicy scent work great in the kitchen.They can also be grown in flower pot. Rose vinegar is made from its petals. A spicy, oriental aroma can be found in the wrinkled rose and the moss rose.
I noticed that the classic pink flowers have a typical rose fragrance, while the yellow and orange flowers smell sweet and fruity with a hint of citrus. The white ones, on the other hand, have an elegant, floral scent.
We pick rose petals in the morning, then the concentration of essential oils will be the highest and they will remain aromatic.
Rose petals can be prepared in different ways. I have my own method.I cover the washed flakes with sugar in small jars and pasteurize them for 15 minutes.This way I obtain a syrup for use in winter. It can be added to teas, cakes and desserts.
In the summer, I use candied flakes to decorate ice cream and other goodies. Just picked and washed, dry in the oven, smeared with whipped protein and sprinkled with sugar and crystals.
