How to store horseradish roots

Horseradish, and especially its root, is a popular spice, appreciated in many cuisines of the world.Storing horseradish rootsis not difficult. Horseradish rootsintended for storage are harvested in autumn, when the leaves of the plant start to turn yellow. For food purposes, only young roots are harvested, as the old ones become too hard and stringy.

The quality of the stored roots is greatly influenced not only by the temperature but also by the humidity in the storage room. Too humid and cool room is ideal conditions for the development of fungal diseases and putrefactive processes. The air movement is also important, and therefore the possibility of airing.
